Chicken ala Chad

Chicken à la king is one of my fan favorites and very easy to prepare on the stove or in a crock pot. It's a great way to use leftover chicken, grocery store rotisserie chicken or leftover Thanksgiving turkey. Green peas and red peppers make this a coordinated dish to serve at Christmas or anytime. Serve over potatoes , cooked rice, toast, biscuits or noodles. This is a great cold weather comfort food.


Prep Time: 15 mins

Cook Time: (Pan)20 mins, crock pot (2-4hrs)

Total Time: 35 mins

Servings:  approximately 8


Ingredients:

½ cup butter

1 cup frozen peas

1 Cup frozen carrots

1 red bell pepper, finely chopped

½ cup all-purpose flour

1 teaspoon salt

¼ teaspoon ground black pepper

1 ½ cups milk

1 ¼ cups hot water or chicken stock

1 ½ teaspoons chicken bouillon powder

3-4 Cups cooked chicken. (Rotisserie, chicken breast, pulled...doesn't matter, just what you have available)


Step 1...Gather all ingredients


Step 2...Melt butter in a large skillet over medium heat. Add red bell pepper and cook, stirring, 5 minutes.


Step 3: Remove from the heat. Stir in flour, salt, and black pepper. Cook over low heat, stirring constantly, until mixture is bubbly.


Step 4: Stir in milk, water(or stock) bouillon, Increase heat to medium-high and bring to a boil, stirring constantly. Boil and stir for 1 minute.


Step 5: Stir in chicken and vegetables and heat through.


Step 6. If serving with noodles, you can add 1/2 cup chicken stock and a bag of wide egg noodles to the mix and allow them to cook for 20 minutes.


Step 7. Serve over rice, biscuits, toast, potatoes, or noodles (if you didn't add them in step 6.)


If making in a crock pot, gradually mix melted butter, milk, stock/water and flour until blended well and creamy. Mix all other ingredients and set crock pot on low for 4 hours (2 hrs on high) stirring occasionally to keep flour from settling and clumping. Add egg noodles 30 minutes before finish.
